Rui Silvestre.

Rui Silvestre is the head chef of Michelin Starred fine-dining Vistas restaurant at the Monte Rei Golf & Country Club in Vila Nova de Cacela, Portugal.

In 2015, he became the youngest chef ever (29yr) in Portugal to helm a restaurant that was awarded a Michelin star when he was the head chef at Carvoeiro’s Bon Bon restaurant.

In 2017, he was one of only 10 chefs around the world to receive the coveted 'Prix au Chef de L’Avenir’, awarded every year by the International Academy of Gastronomy (IAG) to the world’s most promising young chefs.

Incredibly, Rui and his team has maintained the Michelin Star at Vistas for 3 years running from 2020 to 2022.

Michelin Guide describes how Rui Silvestre surprises his guests 'with cuisine that is delicate, balanced while showcasing considerable technical skill, endowing classical recipes with a splash of modernity.'

By using French techniques and fusing unlikely flavours, Rui loves to merge the finest products from both earth and sea, in an innovative way which evokes all the senses.

Rui’s aim is to perfectly preserve the authentic taste of the exceptional local ingredients, until the dish reaches your table. Every dish expresses the richness of each ingredient around which it was built.
